Pale blush with clear hues. Perfumed with peach and apple blossom, melon, apricot, pear and strawberry. Lush entry with red berries, ripe nectarine, peach and mandarin. Mouthfilling, complex and concentrated with fresh vibrant acidity and balanced with a long sweet.
Wine making notes:
The fruit (100% Pinot Noir) was harvested on 8th April 2020 and was whole bunch pressed to a stainless steel tank for cold settling. The juice was then racked and inoculated with selected wine yeast. The cool fermentation was stopped on balance retaining a touch of residual sugar.
